For Foodservice Industry Allergen Safe Service for Restaurants and Cafeterias This course is designed to give servers, managers and chefs the knowledge necessary to identify and reduce the risk factors for allergic reactions. Understand the Food Allergy Labeling Consumer Protection Act of 2001 and the causes and symptoms of allergic reactions. Prepare a strategy for serving patrons who identify themselves as food allergic. Learn how to respond to a food allergy reaction, administer medications associated with food allergies and identify ways to avoid allergens during food service. This non-certification course can be presented as an add-on module to American Red Cross First Aid/CPR/AED/Epinephrine/Asthma Inhaler Certification Training course(s). Learn how to store and use medications associated with food allergies and identify ways to shop and prepare food to avoid allergens.
